Spitfire Tacos will soon join Juneshine’s flagship location and brewing facility in Scripps Ranch. According to a recent permit filing and confirmed on their Website, the innovative taco concept will replace Enclave which held a stall inside the Juneshine Ranch tasting room. Enclave has gone on to open their own brick-and-mortar restaurants.
Spitfire Tacos is the brainchild of Slater’s 50/50 founder, Scott Slater. Spitfire Tacos takes pride in serving up non-traditional Mexican food with their North-of-the-Border options including tacos, burrito bowls, and loaded totchos.
Along with expanding to Scripps Ranch, we can expect another outpost of Spitfire in Pacific Beach at the long-awaited Mission + Garnet Food Hall by Apex Brand Collection.
Originally projected to open around Memorial Day 2022, the food collaborative is now expected to debut in Early 2023 with six concepts including Spitfire Tacos, Early Bird Breakfast Burritos, Checkered Churros, Harvey Carver, and Head Lettuce.
