Brunch champions Cocina 35 is planning their third restaurant space in San Diego. The Comida Corrida (build your own plate) restaurant currently operates Downtown and in Otay Mesa, and are now planning to add a hub in Liberty Station. They’ll replace the former Soda and Swine Restaurant on Dewey Road

Established in 2012, Cocina 35 specializes in Mexican breakfast and is known for the best Chilaquiles in town. They offer Chilaquiles plates smothered in your choice of signature sauces, with your choice of meats and add-ons, plus Mexican scrambles, and Cajeta Toast. 

What Now San Diego spoke to Owner Paulina Chaidez back in October about their booming takeout sector as they prepare to join Aztec Food Hub in College Area. “Due to COVID, both of our restaurants got hit in a good way with to-go orders,” explained Chaidez. To keep up with increased takeout demand, both of their restaurants established ghost kitchens in the back of house to not interfere with front of house staff maintaining regular restaurant service.

“We’ve redone our to-go orders to make the crunchiest Chilaquiles that you can build yourself at home in 15 seconds. Instead of having a soggy dish, we’ve made everything special to prepare when it’s delivered to you,” says Chaidez.

Along with their new takeout method for crunchy and delicious Chilaquiles at home, Chaidez hinted that Cocina 35 might try extending their hours past breakfast. With the addition of spots in Aztec Food Hub and Liberty Station, we’re excited to see how their menu may grow.

Cocina 35 is in the permitting process for the restaurant in Liberty Station; an opening date has not been announced. For now, San Diegans can get the Best Chilaquiles at their original location at 1425 Sixth Avenue near Cortez Hill and further South in Otay Mesa. Stay updated by visiting their Website.
