A brand new eatery called Knead Bakery is getting ready to make its debut in Downtown San Diego at 750 B St.

The new bakery will move to the ground level of the Symphony Towers early next year, possibly in January or February 2024, according to San Diego Magazine. This is the newest venture from pastry chef Adrian Mendoza, who was approached by general manager Brian Lee of the University Club to open the concept together. Mendoza will bring his experience working at Urban Kitchen Group, Herb and Wood, and Wayfarer Bread & Pastry.

Knead Bakery will sit on the ground floor of the 34-story high-rise within downtown San Diego’s Financial District. The building also serves as home to the 2,255-seat Copley Symphony and the exclusive University Club, which will help bring foot traffic to this new concept. Before these eating concepts, the building previously housed a Symphony Cafe. Knead Cafe will now serve as the primary grab-and-go eating destination for the building.

When the new concept opens early next year, customers can expect a variety of fresh breads and pastries, including baguettes, sourdough, focaccia, danishes, muffins, hand pies, and specialty cakes, as well as fresh juices, coffee, and seasonal fare from local farmers. Knead Bakery will be open Monday-Friday from 7 a.m. – 3 p.m. for dine-in and takeout. The two hope this bakery will bring new life to the area and encourage the community to re-explore downtown.
