Big plans lie ahead for IZOLA Bakery, as detailed in an open crowdfunding campaign to raise funds and awareness for an expansive new bakehouse in City Heights.

Owners Jeffrey Brown and Jenny Chen told the story of IZOLA’s modest beginnings in a sitdown with San Diego Magazine for the Happy Half Hour podcast. Inspired by their travels in France, Brown and Chen returned to San Diego at the start of the pandemic and started experimenting with croissants and sourdough. 

IZOLA Bakery soon turned into a local sensation and their modest setup was booming by June 2020. After being named Yelp’s “Number 1 Bakery in the US,” they actually had to turn away customers from their East Village outpost in order to maintain quality and the elevated customer service they have built the brand on.

Now, Izola Bakery has swooped up a 4,790-square-foot site at Fairmount and Thorn in City Heights, partnering with Heleo Architecture to transform the building into IZOLA Main production facility and cafe. The multi-level hub in City Heights will feature environmentally friendly equipment and low-waste methods, with a peek into the kitchen so customers can view how their croissants are made. 

As the growth plan outlines, IZOLA Bakery Main will give way to mobile units to frequent local farmers markets and pop-up events, additional cafes across San Diego and Orange County, and retail opportunities. 

The project involves utilizing technology to improve on Izola’s handmade croissants through automation. Even with increased production capacity, Izola’s guiding values include providing premium customer service and living wage jobs and career opportunities for the community. 

IZOLA Bakery Main in City Heights is anticipated to open in Early 2024. For now, loyal customers can gather baked goods at IZOLA’s East Village bakery and visit their website for information.
