Co-owner Roddy Browning tells What Now San Diego the expansion plans include tying in more fine dining elements, offering a customized retail experience, and increasing catering capabilities.

Browning explains Swine Wine Bottle Shop and the East Wing Lounge will be connected by adjoining doors but will offer a new look and feel than its sister business Flying Pig Pub.

The East Wing Lounge accents its 100-year-old building with a beautiful open ceiling with exposed redwood beams and mid-century modern design influences. The intention was to keep things intimate, with 38 seats, and a chef’s table to reintroduce wine dinners and special events.

“The whole fine dining experience was challenged during Covid and I’m most excited to offer more wine dinners and private dining experiences,” shares Browning. The chef’s table holds 12 and while it’s not necessarily private in the space, its a new offering to guests and an opportunity to showcase the high-quality dishes their restaurant is known for. “Everything is done fresh. We like making fresh food with our hands, we butcher our own meat at The Pig and we’ll be doing handmade pasta dishes.”

A retail license was acquired last year in order to pivot and offer a custom wine-buying experience in-house. At Swine Wine Bottle Shop, Browning will showcase his 20+ years as a sommelier. Customers can share their interests and needs and get paired with bottles to match their specific palate requirements. “The wine will be changing all the time and with the seasons. I’m a fan of variety. I don’t typically buy a case of one particular wine myself. Opposed to offering the same things, we’ll offer a mixed-bag wine experience,” shares Browning.

The expanded space also includes a prep kitchen that will allow Flying Pig to secure more catering opportunities.

Over at “The Pig,” Browning assures that they’re staying true to their original style, offering handcrafted comfort food dishes with a Southern influence. The Brownings also operate Bantam’s Roost Public House in Carlsbad for more fresh pub cuisine.

Swine Wine Bottle Shop and East Wing Lounge are in progress and hope to be opening doors in April 2023. For more information, visit the Flying Pig Website and follow Swine Wine Bottle Shop on Instagram
