A new 9.5 acre mixed-use site called The Hub at Scripps Ranch is currently in development off of Interstate 15 at Carroll Canyon Road. The project by Sudberry Properties will bring luxury apartments plus retail and restaurant opportunities to the Scripps Ranch area. According to The Hub Website, the setting “provides an urban lifestyle in a coveted and charming environment.”
Leasing agency Retail Insite lists Big Cheech’s Chicken N’ Waffles in their official Site Plans and will move in next door to Starbucks at The Hub. Residents could begin moving into the new community as soon as October.
Scripps Ranch News reported that Big Cheech’s is expected to open Spring 2022. What Now San Diego reached out to Owner Diah Asker for confirmation but did not receive a response. Diah Asker is also Co-Owner of Junction Bar and Grill in Scripps Ranch and El Cajon. What Now confirmed that Big Cheech’s is not affiliated as a business entity to Junction.
