Big Cheech’s Chicken, Waffles and Sliders, a new fast-casual restaurant offering a wide variety of made-to-order meals is now open at The Hub at Scripps Ranch, a mixed-use redevelopment project located at the gateway to Scripps Ranch at 9810 Carroll Canyon Rd., just east of Interstate 15.

Big Cheech’s specializes in a unique take on chicken, waffles, sliders, as well as other menu items, including vegetarian options.

The restaurant features a modern, inviting atmosphere with comfortable customer seating. It is open 10 a.m. to 9 p.m., seven days a week.

“We’re very excited to bring Big Cheech’s to The Hub in Scripps Ranch,” said Diah Asker, concept creator of Big Cheech’s Chicken, Waffles and Sliders in a statement. “Our goal is to provide fresh, delicious food and great service in a convenient location for our customers. We can’t wait to welcome everyone to Big Cheech’s and become a go-to destination for fast, casual and delicious meals.”

The Hub at Scripps Ranch is a mixed-use redevelopment project developed by Sudberry Properties featuring 260 modern luxury apartments with outstanding amenities and 10,700 square feet of retail/restaurant space. The commercial spaces are 100 percent leased and the final apartments are being leased now.

In addition to Big Cheech’s, commercial tenants at The Hub at Scripps Ranch include Carroll Canyon Dental Group and Starbucks. Junction Bar and Grill is expected to open mid-summer.
