The Lab Collaborative to Bring Cutting Edge Dining to Oceanside

An American style bistro with craft cocktails is coming to Oceanside.

The Lab Collaborative LLC is a brand new restaurant group coming to Oceanside. The company will open their flagship restaurant, The Lab Collaborative, on Cleveland St. later this summer.

Speaking about the concept, managing owner Jack Everett told What Now San Diego the Lab Collaborative will take a fluid, cutting edge, and evolving approach to dining. They plan to have the occasional guest chef, in addition to their executive chef Ramiro Guerra, formerly of Belching Beaver Tavern.

“We’re just going to stay as local as possible when it comes to sourcing our food, vendors and products. We want to give back to our community and become a staple in the City of Oceanside and in the beach communities up and down San Diego’s coast,” Everett added. Everett is an experienced restaurant and hospitality manager with over 17 years in the industry.

The restaurant will operate out of the 4,300 square foot space on the corner of Cleveland St. and Mission Ave., in the Pierside North mixed-use development.

Everett says The Lab Collaborative hopes to be up and running by July or August—so whether you’ve just come off the beach from a surf sesh, or you’re looking for a sophisticated meal on the town, you’ll want to keep an eye on this restaurant’s opening plans.
