True Capital Partners announced a huge new agreement today with Koibito Poke from Scottsdale, Arizona. The franchise development group will fast track the poke concept to 300 new locations in eight states over the next five years.

Koibito Poke CEO and Co-Founder Todd Stottlemyre explains in the press release, “After spending a year looking for the right development partner, we are very pleased to engage with a group with such a proven track record for success.” Stottlemyre is a former MLB pitcher, three-time World Series Champion, two-time bestselling author, who founded Koibito Poke in 2018. Since 2018, Stottlemyre has expanded the brand to four Arizona locations currently in operation.

Guests at Koibito Poke can “build-a-bowl,” with a wide variety of fresh ingredients and the ability to tailor-make their dishes based on their dietary preferences. The restaurant also caters to newcomers unfamiliar with poke bowls. Try the “First Timer Bowl,” which includes Hawaiian Tuna, edamame, cucumber, pineapple, and crab mix, over your choice of rice or greens, and topped with green onions and house sauce. 

San Diego is a natural choice for franchise placement, providing the coastal landscape and popularity of poke brands within our market. Target states for expansion include California, Washington, Idaho, Texas, North Carolina, South Carolina, Georgia, and Florida.
