Ceviche Craft celebrated its first year of business last December and is looking to continue to grow and expand in 2021.

The Latin-inspired restaurant is set to open a second location in the spring at the Del Mar Highlands Town Center, at 12925 El Camino Real, in suite 29, where customers will be able to customize their meals.

The original location sits at 1610 Millenia Ave, Suite 102, in Chula Vista.

The new space will be 1,147 square feet with the lease expected to start in April.

Along with Vietnamese restaurant Xin Chao and other tasty cuisines Ceviche Craft wants to give Del Mar shoppers a different kind of option for their taste buds.

Customers can make their colorful ceviche bowls by choosing a protein and selecting other mouth-watering flavors with fresh seasonal garnishes to added on top.

Owner Michel Lombrozo could not be reached for comment prior to this story being published.
