The Brine Box To Debut At Oceanside Pier Soon

The duo behind Oceanside’s essential eatery The Plot, Jessica and Chef Davin Waite, are keeping busy in North County. The pair are working on another outpost of The Plot in Carlsbad’s revamped development, The Cottages on Roosevelt. Before then, they’ll introduce a new seafood-focused spot called The Brine Box right in their Oceanside stomping grounds.

The Waite’s have shared a sneak peek at all the delicious treats they’ll pack into the 109-square-foot space at the end of the historic Oceanside Pier.

The San Diego coast is the star of the show at The Brine Box, sourcing the freshest of catches and serving dishes made for enjoying while walking along the pier and seeing the iconic Oceanside sights. 

Focused on sustainable-seafood practices and low-waste methods, The Brine Box will partner with trusted local fishmonger Tommy Gomes. The menu is expected to update with the seasons, serving rockfish in the winter and yellowtail, tuna, or swordfish in the summer. 

The Brine Box will take inspiration from traditional English chip shops, serving classic fish and chips with the Chef Davin touch. Also behind the menu will be Chef de Cuisine, Rachel Hurley of The Plot and Wrench and Rodent. Guests can look forward to dishes like “Chovy Toast,” fish sandwiches, Tuna Chorizo Elote, grab-and-go options like Fish on a Stick, Clam Chowder tater tots, plus additional raw and plant-based options.
