Wild Thyme Restaurant Group Working On New Japanese Concept

Kaiseki Sushi Planned for The Forum in Carlsbad

A brand new concept called Kaiseki Sushi is making plans for its debut at The Forum in Carlsbad. According to a recent ABC permit filing, the new restaurant looks to move into the space formerly occupied by Jay Bird’s which opened and closed this year. The business will neighbor the latest outpost of Parakeet Cafe which is in the works.

The restaurant looks to be the latest project from Wild Thyme Restaurant Group who operate Jay Bird’s Nashville Hot Chicken locations in Southern California and will soon open a third outpost of Shorebird in Seaport Village, serving California coastal cuisine.

While we don’t know much about Kaiseki Sushi just yet, Wild Thyme’s Culinary Director Jay Bogsinske and Executive Chef Tin Nguyen look to be dabbling with contemporary Japanese this year. The hospitality group opened Kai Modern Japanese Bistro in Huntington Beach this fall.

Kaiseki is the term for a traditional multi-course Japanese dinner highlighting sushi and other small side dishes. It’s unclear when Kaiseki Sushi is planning to open in Carlsbad.
