A health-conscious Thai restaurant is making its way towards a late March open at 928 Fort Stockton Dr. in Mission Hills.

With this new concept, owner Artchaporn Klongwicha is hoping to bring “fresh and healthy” cuisine to the table. Her family once owned the Kafe’Yen Thai Restaurant in Pacific Beach, and Klongwicha has since become even more invested in culinary arts. After attending culinary school, she developed her own concept: What De Health Thai.
“I have a passion for cooking and I want to turn it into a career,” Klongwicha told What Now San Diego on Tuesday.
The restaurant aims to prioritize fresh ingredients and healthy greens. Thai food is known for its colorful dishes and bold flavors; Klongwicha is leaning into the lighter, leaner elements of the culinary tradition.
Over the past few months, What De Health’s Instagram page has been teasing menu items like fresh spring rolls made with rice paper and shrimp, served with peanut sauce. Klongwicha shared an exclusive tasting menu featuring healthy twists on Thai classics.
Guests will soon be able to try her rendition of tom kha soup with galangal root, lemongrass, kaffir lime, chili oil and caviar, among other unique flavors. Other dishes include savory salmon green curry, pad thai with tamarind sauce, and delectably tangy mango sticky rice.
Once open, What De Health Thai will find itself across the street from Meshuggah Shack, the quaint and colorful coffee and breakfast shop. Just a block away from the heart of Mission Hills, What De Health Thai will also be walking distance from other local favorites like Harley Gray Kitchen & Bar, Farmer’s Bottega and Lefty’s Chicago Pizzeria.
