The Paleta Bar Planning Entrance to Windmill Food Hall

A permit application filed Thursday evening points to The Paleta Bar’s pending expansion to South Carlsbad’s Windmill Food Hall. After spreading throughout New Mexico, the ice pop brand made its California debut in Escondido three years ago.

The Paleta Bar offers made-to-order, customizable ice pops, ranging from tart and fruity to rich and creamy. The three-step ordering process allows the customers to choose their paleta base flavor, their preferred chocolate coating and toppings. 

For the more indecisive dessert lovers, The Paleta Bar recommends combinations like “Almond Joy,” “Oreo Lovers” and “Paleta Meatchelada,” which is a fruit-based ice pop topped with tajin and chamoy Mexican spice. 

The brand announced their newest North County expansion in a Facebook post yesterday, which reads “Windmill location coming soon…”

Once open, The Paleta Bar will be joining Notorious Burgers, Lobster West and Corner Coffee, among many other Windmill Food Hall vendors. The food hall is open from 12 p.m. to 8 p.m. daily, with takeout and outdoor seating options available.
