The Gypsy Alchemist to Brew Turkish Coffee and House-Made Chai in Del Mar

Sarah Jaeger is breaking the local cafe mold with sand-brewed coffee and herbal tea

After years spent developing her coffee shop concept, Sarah Jaeger decided to ditch the espresso machine and opt for a more unconventional brewing method: The Gypsy Alchemist will feature traditional, sand-brewed Turkish coffee.

Sand brewing is a process that uses sand to regulate the coffee’s brewing temperature over an open flame. The final product is a rich, aromatic brew.

“We’re wanting to honor the coffee roasters and their specific styles,” Jaeger told What Now San Diego. “So not only is the sand brewing really fun to watch, but it also brings out the flavor of the coffee in a really delicious way.”

Jaeger hopes to open The Gypsy Alchemist by late spring or early summer at 1202 Camino Del Mar. In addition to Turkish coffee, she plans to feature a range of herbal tea and baked goods. 

“Drinking coffee and tea should be a social thing,” she said. “I’m hoping that by the time we open, there will be fewer restrictions, and we’ll be a kind of oasis for people to meet with their friends and loved ones and family.”

By leaving espresso machines out of the routine, Jaeger hopes to limit the background noise present in most cafes and offer a more peaceful gathering space. 

While she has yet to announce any brand partnerships, Jaeger has her sights set on several independent and sustainable coffee roasters and tea distributors. More updates are to come on their website
