The group operates nine unique concepts throughout San Diego, including Kettner Exchange, FIREHOUSE American Eatery & Lounge, Vin de Syrah, The Grass Skirt, Good Time Poke, and Devil’s Dozen Donut Shop. Now, it appears the group is taking over another well-known concept, Wolfie’s Carousel Bar. SDCM Restaurant Group recently held an open job fair in Firehouse and mentioned that the group plans to take over the restaurant this summer and rebrand it to become Wilma’s Carousel Bar.

Wolfie’s Carousel Bar was originally owned by Mauricio Couturier, his wife Gillian, Abe Aguilar, and his brother Ricky, who also helped open Bang Bang and El Camino. The center of the building features a course built and immortalized in 1881 by German carousel master carver and builder Charles I.D. Looff—nicknamed “Wolfie” by friends. The four owners individually painted its 400 bulbs and opened in 2021. Now, the restaurant has officially closed its doors and is preparing to rebrand under new ownership in the coming months.

“Owned and operated by Matthew Spencer, SDCM was founded on Spencer’s 20 years of hospitality industry experience,” according to SDCM’s website. “SDCM is a rapidly growing company that spans nine concepts, each with a distinct culinary voice, style, and identity. Award-winning Corporate Executive Chef Brian Redzikowski, formerly of Le Cirque 2000, Nobu Matsuhisa Aspen, and Joel Robuchon at the Mansion in Las Vegas, leads menu development for all six of SDCM’s creative concepts and is responsible for sustaining and elevating culinary offerings for all current and future projects.”

  1. My experience with one of San Diego Dining Group’s restaurants is disturbing and shocking. They blatantly overcharged thousands of dollars for an event. The remedy offered is insulting. Beware diners and anyone else who might consider dining or doing business with them, their restaurants, or affiliates.
