Elmerinda Dinitto of Fresco Grill filed for a liquor license for a brick-and-mortar in Carlsbad.

Elmerinda Dinitto is no stranger to the restaurant industry. With Fresco Grill and the former Tiberius Antro, Dinitto has been serving SoCal for a while. It appears Dinitto and co-owner Francesco D’Arcangelo are looking to open a new eatery, Fresco Cocina.

Dinitto filed for a license with the California Department of Alcoholic Beverage Control for 2858 Calsbad Blvd in Carlsbad. The license is currently pending.

We were unable to reach Dinitto for comment at the time of publication, so we are unable to speak to the new restaurant’s concept. However, if Fresco Cocina is anything like Fresco Grill, you should expect authentic food and a casual and inviting atmosphere. From spaghetti carbonara to steamed mussels, the Fresco Grill has a substantial menu of Italian food, including a selection of Pinsa, or Ancient Roman Pizza.

The new eatery will sit at the corner of Carlsbad Blvd and Grand Ave, only a couple of blocks in-land from Carlsbad State Beach. In the meantime, Fresco Grill is open for dining in and ordering out. You can even book your next catered event with the eatery.
