The company’s third location is set to move into the former home of Rubio’s in Pacific Beach, near San Diego Cyclery and The Grass Skirt. Co-owner Jeff Fink confirms with What Now San Diego that this location is in the works and is expected to open sometime next year. The restaurant, owned and operated by Fink and Matt Sieve, is opening a second location in Hillcrest, previously reported by What Now. When these two sites open, customers can expect everything needed for a delicious brunch experience.
Madi offers a little bit of everything for brunch, starting with shareable plates such as waffle churro sticks and options from the griddle. To simplify the menu, the restaurant offers a list of “Madi Faves,” ranging from a Mediterranean breakfast and chilaquiles verdes to a super breakfast burrito, biscuits and gravy, and more. To drink, Madi offers plenty of coffee options, mimosas, and other options. The restaurant also offers a lunch menu and a build-your-own-bowl option for a savory choice. There’s also a list of cocktails and mocktails to enjoy.
This is a massive accomplishment for the ownership team, who started the brand in early 2016 when they opened Madison on Park. Fink, an attorney who owns M-Theory Music and FLUXX nightclub, partnered with Sieve, a seasoned restaurateur who previously ran Isabel’s Cantina in Pacific Beach, to open the concept. Then, in 2022, the duo expanded the brand into its brunch-focused version with the opening of Madi in Normal Heights. Hopefully, by the end of next year, Madi will have three locations in San Diego County.
