Co-Owners Genaro Rodriguez and Marie Aldebert operate E•’lo•te Restaurants in Valley Center and Escondido. What Now San Diego spoke with Rodriguez about joining Old Town Urban Market.

“It’s a really cool concept, they’re bringing in a lot of really great tenants. The area in general needs something more modern. This will revive the area with something new for a younger crowd,” shares Rodriguez.

Their menu for their Old Town debut will match their original Valley Center concept and will feature roasted corn on a stick, corn in a cup, plus agua frescas. This is slimmed down from their Escondido location which offers a full menu of burritos, tacos, quesadillas, and loaded up elote-style street corn.

“We’re recreating the menu from our first location, which started as an E-Z Up tent in Valley Center. We’ll be roasting corn on-site and you’ll find us right near the entrance of the market so customers can smell the corn being roasted in front of them,” shares Rodriguez.

E•’lo•te will serve roasted corn with traditional street snack toppings: mayo, cheese, tajin, and fresh lime juice. Their corn is customizable for folks who might not like mayo or spicy toppings.

Catch E•’lo•te as they join Old Town Urban Market in January 2022. Find them open in Valley Center and Escondido and give them a follow on Instagram for updates.
