Denver’s hit taco truck, Carrera’s Tacos, won’t be reserved solely for Denverites much longer. Brothers Josh and Ryan Carrera grew up in San Diego playing sports and working in kitchens. Together with Luis Romero, they worked as sous chefs running multiple restaurants. And now, they have plans to bring a little something from their time away back to San Diego.

“We do plan to open our first truck in San Diego in 2022-2023 with our childhood friend,” Josh Carrera wrote to What Now San Diego. Romero will help launch Carrera’s first San Diego expansion.

“Carrera’s is basically 20 plus years of us eating the best Mexican food in San Diego/ Tijuana, and mixing it with technique, and flare that we learned from working in some amazing Fine Dining restaurants,” says Carrera, “We take some hometown staples such as Cali Burritos, Queso tacos, Birria, and recreate it with a chef twist. Everything we make on our truck is from scratch, and we come up with new seasonal specials to keep people interested.”

Of the menu items, Carrera recommends the tacos, street fries, and Cali burritos. You can choose between carne asada, pollo asado, adobada, birria, carnitas, shrimp, and marinated cauliflower for proteins, and everything on the menu is customizable.

“Our San Diego truck would have more of a coastal element. With a lot of local and fresh seafood available we would have ceviches, and agua chile readily. Along with menudo & pozole on weekends to fit the hometown trend,” Carrera added.

The plans are still a ways out, but in the meantime, you can always follow Carrera’s social media for a teaser.
