Borrego Kitchen & Cocktails, named for California’s largest state park, is preparing to debut on the ninth floor of Hotel Indigo – San Diego Gaslamp Quarter, at 509 Ninth Ave.

Inspired by the Borrego desert, the new restaurant and bar will celebrate Southern California’s culinary heritage and community influences and will transport guests into a vibrant outdoor destination, according to a recent press release. Reflective of the city itself, Borrego and accompanying private meeting and event parlors provide solace from the ocean to the west and desert to the east, with the bonus of a thrilling view of Petco Park. The new restaurant is expected to open on March 28th.

“We are incredibly excited to debut Borrego this spring as an homage to San Diego’s culinary heritage and culture,” Oliver Kahf, general manager of Hotel Indigo San Diego, said in a press release. “We envision Borrego as a rooftop destination for both locals and visitors, one where individuals can come one night for drinks and the next for a meal while taking in panoramic views of the city and Petco Park. We look forward to welcoming everyone on March 28th.”

A desert-inspired oasis, the rooftop restaurant will offer dynamic food and beverage pairings rooted in the city’s diverse collection of cuisines. The menu will take patrons on a playful culinary tour highlighting regional ingredients used uniquely deliciously and inspiring signature dishes. The local and regional influences continue through the robust beverage program created by Lowder Tascarella Hospitality – LTH. From surprising spices such as cumin, cacao, and ancho chili to a wide selection of local beers, the cocktail menu will offer signature cocktails and a dedicated selection of zero-proof offerings.
