Within the next couple of months, Blue Box Butcher will make ordering choice cuts as easy as calling an Uber. Consulting member and master butcher Rick Wright predicts that the shop at 2102 India St. will open anywhere from the end of February to early March. Little Italy locals will soon be able to browse the butcher shop’s available selections on an app, place an order and pick it up within 15 minutes.

Having always been interested in hunting and cooking, Wright decided to pursue butchery and learn from the best. After stints with the likes of L.A.’s Lindy & Grundy and Belcampo butcher shops, Wright became a butcher for several upscale restaurants.
With Blue Box, he hopes to bring the same high-quality meat to the typical San Diego home kitchen, leading people away from industrialized, commercial meat and towards a more sustainable standard. By using mid-scale producers, Blue Box will be a few extra steps in the right direction compared to the average grocery store butcher aisle.
“There are only a handful of distributors who service the higher-end steakhouses and restaurants in the area,” Wright told What Now San Diego. “We’re utilizing those same distributors to provide access to quality meat at a fraction of the price, to the everyday consumer.”
The quality of meat depends on its freshness, and Blue Box plans to receive new deliveries daily. So, don’t fret if your charcuterie board is incomplete — Blue Box will have a restock ready the next day.
“In the beginning, we’ll probably run out of certain items here and there, but the idea behind that is we’re prioritizing freshness,” Wright said. “We’re just going to be doing our best to fill that void.”
Blue Box is entering the small retail space recently occupied by Grab N Go Subs. Once open, customers can pick up their order at a to-go window, stay in their car for curbside pick-up or opt for a Postmates delivery.
In addition to the Little Italy location, Blue Box Butcher plans to open a Banker’s Hill location by the end of 2021.
